One of the most challenging foods for people to get enough of is green leafy vegetables.
Learning to cook and eat greens is essential for creating lasting health. Greens help build our immune system and strengthen our circulation and respiration. Greens are high in calcium, magnesium, iron, potassium, phosphorous, zinc and vitamins A, C, E and K. This is why they are excellent for the health of our gums and teeth.
Be adventurous and try greens you’ve never had before. Rotate them in salads. I like baby greens, kale, watercress, broccoli and arugula in my salads. I drizzle my greens with a good quality olive oil, and follow with a ½ a lemon squeezed over top with some sea salt and pepper.
You can also steam, boil, and saute greens. Boil for under 1 minute to retain the most nutrient value. Sprinkle with vinegars to add flavor.
The body replenishes itself every day, so give it the nutrients it needs to prevent disease, and start with greens!
